Who doesn’t love scrambled eggs on Toast? The great news is you can easily make at home, in the microwave.

I’m happy to share my 2 minute scrambled egg recipe with you.

Enjoy over some Low Carb Toast.

Feel free to make additions to your eggs whilst cooking – we love fresh herbs, feta, tasty cheese or chilli!

Prep Time: 30 seconds

Cook Time: 2 minutes

Serves 1

Carbs per serve: 3.2g

 

Ingredients

  • 2 Whole Eggs
  • 3 Tablespoons Milk or cream of choice
  • 1 teaspoon Butter
  • 2 Slices of Low Carb Bread

*Nutrition calculated as recipe above with 2 slices of Low Carb Bread

Method

  1. Crack eggs in a bowl and whisk with a fork.
  2. Combine with milk/cream + butter
  3. Cook in microwave for 60 seconds then whisk with fork
  4. Repeat for another 60 seconds until light and fluffy

Enjoy these light and fluffy scrambled eggs on 2 slices of Low Carb Bread for a delicious low carb breakfast! Or simply enjoy by themselves with some fresh herbs on top! Super easy and fast to make even in the office microwave 🙂
