Seeing as my first Protein Cookie recipe went a little crazy online, I think that there must be a shortage of simple, easy, low carb, snack recipe’s out there – so I decided to make some more.
These cookies are such a great morning or afternoon tea, or accompaniment to your coffee, for when you just feel like something little.
As always, you can make them double the size and create your own protein cookie meal replacements!
SO Super convenient when you are out and about and can’t find anything suitable to eat (and how often does that happen!!!)
If you do wan’t to make the larger cookies, just divide the mixture between 8 instead of 16 – and then double all the figures on the nutrition table.

Prep Time: 10 minutes
Cook Time: 15 minutes
Makes: 16 Cookies
Choc Chunk Protein Cookie Ingredients
25g desiccated coconut
100g dark chocolate (I used Lindt)
2 tablespoons of sweetener of choice (optional)
75g almond meal
25g lupin flakes
50g melted butter
2 teaspoons vanilla extract (optional)
Pre Heat your oven to 180deg.
Line a baking tray with baking paper.
Place all dry ingredients together in a bowl – combine and make a well in centre.
In a separate bowl whisk together eggs & melted butter.
Pour the egg mix into the dry mix.
Fold together and combine well.
Using a table spoon roll inch size balls of dough.
Flatten each ball between the palms of your hands (you may get a little sticky :()
Place cookies on baking tray.
Bake for 15 minutes (the colour wont really change – this is normal when you bake without sugar!)
Remove and cool.
These Cookies can be enjoyed for up to 10 days – keep refrigerated to ensure freshness
Cookies can be frozen for up to 6 months.
