Nothing beats a warm comforting Chicken soup. Packed full of veggies, this soup will keep your immune system nice and strong. The extra hit of pesto just gives a nice flavour.

Cook Time: 10-15mins

Serves: 4 


  • 500g chicken mince
  • Small onion
  • Garlic (3-4 cloves)
  • ¼ green cabbage
  • 4 cups good-quality chicken stock  (I used Massel Chicken stock powder 1 heaped Teasp to 2 cups water)
  • Parsley
  • Carrot x 1
  • Celery x 2 long stalks
  • 1 x Leek
  • 1/3 cup pesto (Use your favourite brand)
  • 1 Tb olive oil
  • (optional topping: grated Parmesan cheese)

Serving suggestion with Our Low Carb Savoury Scones:


  • Stir through fresh baby spinach to add extra greens
  • Optional Topping – some parmesan cheese
  • You can switch the stock to a salt reduce stock if desired
  • Mix and match your favourite low carb veggies.
