This fresh minty yoghurt is a great low carb accompaniment to so many dishes.

Can be used as a dip with veggie sticks, over the top of grilled lamb or chicken, served with my amazing Zucchini Fritters for breakfast.

Perfect for Summer BBQ’s as its so light and refreshing – it could actually be used as a dressing as well.

Prep Time: 10 minutes

Minty Yoghurt 

Minty Yoghurt

Ingredients

  • 200g Plain Greek Yogurt
  • 1/2 Bunch Chopped Mint
  • 1 Small, Finely Chopped Cucumber

Method

  1. Wash cucumber and then finely chop.
  2. Wash mint and roughly chop
  3. Mix all ingredients together in a bowl.
  4. Garnish with fresh mint sprigs.

Minty Yoghurt will last for 5 days in the fridge in a sealed jar.

Try using this as a side to your favourite Indian Curry – the cool refreshing cucumber is perfect with a HOT Curry!
